6 inch wide is plenty on the front. a 215/65r15 is about the same height as a 215/70r14. On the rear? Measure the space of your stock tire/wheel to the spring and or inner well. (rear) Measure your stock wheel's back spacing. See how much you can add on backspacing and still clear the spring. See how much you can go on the outside as far as tire to well lip. And don't listen to the counter guy. He already took you down the wrong street.

66 Cyclone GT; 245/60R15's on 15x8's and 215/70R15's on 15x7 Magnum's.
There's nothing like the sound of a pushrod V8 singing at the top of her lung's.

If you want 15" rims, I'd go with a 15x6.
My Comet has the 15x6 American Racing Torque Thrust D's with 205/70/15 tires. They fit well - (very close up front on a full turn but doesn't rub).
Just my opinion of course, but I like the old school look of a 70 series tire (tall & thin) on the '64-'65 Comets. Just think it looks 'period correct' - especially with a vintage style rim.

I have 15x6 up front and 15x7 on the back. I 215/6515 in front and 235/60/14 in the back. I have a lot of room off the springs and can get my fingers between the tire and the quarter. Up front I was worried about the upper control arm so I did the 6" wheels. I do have a 65 and I'm not sure how much this will help you.
