Are those old school Offenhauser valve covers?

No, the valve covers are old school Mr. Gasket from the 60's. From what I understand they stopped making these in the late 60's early 70's.

Congrats! I'm doing the swap in a '62 Wagon. Sadly, mine isn't as far along...
I've got some questions, though... What are you using for headers/manifolds?
